We've been using reversible 60x 60 boards and they've worked really well for all the missions we've played. We have used larger points games as well and the 60x 60 have never seemed too small, loads of terrain helps massively too.
I'd recommend looking at Secret Weapon's tablescape kick starter campaign for modular boards, these will allow huge variation building your boards and can be assembled to any size.[/align]
